Tokaji Aszú
The basis of Tokaji Aszú is hand-selected, shrivelled botrytis-effected berries. The taste and ultimate
quality of an Aszú wine depends on the number of baskets (puttonyos) filled with ripe berries . These
baskets weigh on average 25 kilograms each, and are added to a cask (136 liters) of dry base wine.
Consequently, the proportion between aszú berries and dry base wine is about 1:1 for a 6 puttonyos
Aszú.
A 5 puttonyos Aszú must contain at least 120 grams of residual sugar; while 150 grams are required for
the 6 puttonyos. After several months of fermentation, the Aszú normally matures for 3 to 8 years -
traditionally through oxidative ageing with air contact. Its remarkable richness, counterbalanced with a
bracing acidity characterizes this legendary dessert wine, which is one of the slowest maturating wines
made anywhere, the finest examples take decades to mature and can last for a century or longer.
Tokaji Aszú Essencia
Aside from pure Essencia (which is really sui generis) Aszú Essencia represents the highest quality
level amongst Tokaji wines. Its preparation is the same as that for the Aszú, but the quality level is no
longer indicated by the number of puttonyos - it lies, at a minimum, above 6 puttonyos. Aszú Essencia
has more than 180 grams per liter of residual sugar content and over 50 grams of sugar-free extracts.
Drink with a fine dessert, as one might a Chateau d'Yquem or a German Trockenbeerenauslese.

"I brought this bottle to a tasting where it was tasted beside of Ch Climens and Ch Lafaurie-Peyraguey.
The Tokay showed a very good balance, intense flavors of nuts and a delicate sweetness. For me it was
more elegant than the Sauternes wines in this flight. The last 15% of the bottle was kept and tasted 4 days
later. It showed excellent condition. Even if the wine was very good now, it will last for several decades
more. 94 points."
"Borkombinat was the large state owned cooperative during the communist era which I believe later
changed their name to Kereskedöház and has now been reorganized into Crown Estates. Matched with
dessert of white and dark chocolate mousse with a raspberry sauce. This was a dark burnt orange/brown
color. On the nose it had a hint of balsamic. Wonderful fruit still present in this wine. Notes of blackberry,
orange peel and plum brandy. Almost portlike in character. This wine was primarily characterized by very
lively acidity which held everything together. Full bodied. A great experience.

Pauleczki-Vin Tokaji Muscat Lunel Aszúesszencia 2000
Rare Aszu Essencia from Muscat Lunel.
The Muskotályos Aszú is a speciality in Tokaj-Hegyalja, it is made from Muscat Lunel grapes only. This
wine is a rarity, because the Muscat Lunel is a very weather-sensitive grape and harder to grow than the
Furmint. Otherwise, Muscat Lunel is very susceptible to Botrytis cinerea. Classical Aszú contains normally
not more than 5% of Muscat Lunel and adds an aromatic bouquet to the Aszú especially in its younger
years. Only five percent of the vineyards in Tokaj-Hegyalja are planted with Muscat Lunel vines.
This family-vineyard was founded by Antal Pauleczki and is one of the bigger producers in Tokaj-Hegyalja
with 45 hectaresunder cultivation. The vines grow on famous hills around Tolcsva, including Mandulás,
Szentvér (“Holy Blood”) and Kincsém (“My Lovely”), which was formerly Baron Waldbott´s property. Today
the company is leaded by the founder's children Antal Pauleczki Jnr and Dr. Zsuzsanna Pauleczki.

2000 appears to have been record-setting in terms of must weights, but curiously enough the wines exhibit
very little botrytis, as the early-mature berries remained healthy throughout the warm autumn and in great
part appear to have shrivelled without being much affected by botrytis (I have only seen pictures of 2000
Aszú material and there berries look uncommonly healthy, similar to raisins bought at the supermarket).
As a result, fruit flavours can be uncommonly pure and primary while superripe, and acids almost without
exception freakishly low, although what acidity is left in the wines is often thoroughly ripe and aromatic, with
great subtlety of retro-olfaction, i.e. acidity of quality rather than quantity. I have little doubt the top 2000s will
have a long cellar life, after all, late harvest sweet wine does not age on acids alone, but I must admit that in
general I have difficulties appreciating low-acid dessert wines, even if many 2000s have retained a
remarkable sense of freshness despite their low acids.

István Szepsy Tokaji Aszú 6 puttonyos 2005
A superb Aszu from the most renowned of all Tokaji winemakers.
The Szepsy family have cultivated vineyards in Tokaj-Hegyalja since the late 16th century. István Szepsy, now widely
regarded as Hungary´s most important winemaker, has developed his winery continuously since his father lost the
major part of his vineyards after World War II. Today, István Szepsy´s wines are amongst the very best in the Tokaj
region. He focuses on radical limitation of yields (a maximum of only 400 litres of Aszú per hectare). Not only the
aszú berries, but also the berries for the dry base wine are selected by hand. Today the winery owns an impressive
63 hectares of vineyards in premium sites such as Kiraly near Mád (“King´s Hill”), Danczka, Urágya, Betsek and
Nyulas.

Betsek, also spelled Becsek, is shaped like a crescent moon and faces southeast. Situated to the east of Nyulászó
and Szt. Tamás in the basin of the 1st Growths in Mád, Betsek faces Király – the old Royal Vineyard – and Kővágó.
The area where the vineyard is located is typically cold – lower portions of the vineyard have been known to freeze in
the spring. The black volcanic topsoil contributes to the mineral and lovely black pepper characters in the wine.
Being on the bottom of the valley it is much more “earthy” than the other 1st Growths. The name refers to the Becsk
family from Abaújszántó, that gained some regional prominence in the 15th century.
